Banoffee Pie is a delicious and easy-to-make pie that you can prepare in no time. Ingredients

  • 1 package of digestive biscuits (250g)
  • 125g butter
  • 1 can of sweetened condensed milk (397g)
  • 2 tablespoons of golden syrup
  • 2 tablespoons of cocoa powder
  • 1 teaspoon of vanilla extract
  • 2-3 bananas, sliced
  • 250ml of double cream, whipped
  • Optional: chocolate shavings, toffee sauce, whipped cream and banana slices for decoration

Instructions

First, prepare the biscuit base for the Banoffee Pie. Add the digestive biscuits into a food processor and blitz until it turns into crumbs. Melt the butter in a saucepan over low heat then add the biscuit crumbs. Stir until the crumbs are coated with the butter and then pour into a 20cm cake tin. Use a spoon or the back of a spoon to press down the biscuit crumbs until it forms a flat and even layer. Set aside.

In a saucepan, combine the sweetened condensed milk, golden syrup, cocoa powder and vanilla extract. Heat the mixture over medium heat, stirring constantly until it starts to thicken. Once it reaches a thick and creamy consistency, turn off the heat and pour the mixture over the biscuit base. Smooth it out with a spoon then place the bananas slices on top. Place the cake tin in the fridge and let it set for at least 4 hours.

When the Banoffee Pie is set, top it with the whipped cream. Decorate with chocolate shavings, toffee sauce, whipped cream and banana slices, if desired. Serve and enjoy!
