Ingredients
- ¾ cup (185ml) Ideal Milk
- 1/3 cup (80ml) apricot jam
- 2 tablespoons butter, melted
- 2 eggs
- 1 cup (200g) white sugar
- 1 cup (125g) cake flour
- ½ teaspoon baking powder
- ½ teaspoon bicarbonate of soda
- 1 teaspoon white vinegar
- Pinch of salt
Instructions
Preheat your oven to 180°C/350°F. Grease a 20cm/8-inch round cake tin and line the base with greaseproof paper.
In a large bowl, mix together the Ideal Milk, apricot jam, butter, eggs and sugar. In a separate bowl, sift together the flour, baking powder, bicarbonate of soda and salt.
Add the dry ingredients to the wet ingredients and mix until just combined. Pour the mixture into the prepared cake tin and bake for 30-35 minutes, or until a skewer inserted into the centre of the pudding comes out clean.
Remove the pudding from the oven and leave to cool for 10 minutes. Poke holes in the top of the pudding using a skewer, then pour the vinegar over the top.
