Tantalising Green Tomato Chutney by Jamie Oliver


Do you have a surplus of green tomatoes or want to make something a little bit different? Look no further, because Jamie Oliver has the perfect recipe for you! With a delicious combination of flavours and textures, this Green Tomato Chutney is a great accompaniment to any meal. Ingredients

  • 1 kg green tomatoes, chopped
  • 2 onions, finely chopped
  • 4 cloves garlic, minced
  • 2 chillies, finely chopped
  • 1 tablespoon of grated ginger
  • 2 tablespoons of mustard seeds
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of ground cumin
  • 150 ml white wine vinegar
  • 150g caster sugar
  • 1 teaspoon of sea salt
  • 2 tablespoons of sultanas
  • 2 tablespoons of raisins

Instructions

Start by preparing the vegetables by chopping the tomatoes, onions and chillies and mincing the garlic. Then, heat a large saucepan over a medium heat and add the mustard seeds. Toast them for a few minutes until they are fragrant, then add the onions, garlic, ginger, chillies and spices. Cook for a few minutes until the onions are softened and the spices are fragrant.

Next, add the tomatoes to the pan and cook for a few minutes until they are softened. Then, add the vinegar, sugar and salt and stir to combine. Bring the mixture to the boil, then reduce the heat and simmer for around 45 minutes, stirring occasionally, until the mixture has thickened and reduced.

When the chutney has reached the desired consistency, add the sultanas and raisins and cook for a few more minutes. Then, remove the pan from the heat and leave the chutney to cool completely before transferring it to sterilised jars. The chutney will keep in the fridge for up to a month.
