Eggs Benedict casserole is a simple yet delicious breakfast dish that is sure to satisfy the entire family. Ingredients

  • 2 tablespoons butter
  • 1/2 cup onion, diced
  • 1/2 cup red pepper, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 8 ounces diced ham
  • 6 eggs
  • 1/2 cup milk
  • 3/4 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup butter
  • 4 tablespoons all-purpose flour
  • 1 cup milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

Preheat oven to 350° F. Grease an 8-inch square baking dish with butter. In a large skillet, melt 2 tablespoons of butter over medium heat. Add onion, red pepper, garlic, thyme, and salt. Cook, stirring frequently, until vegetables are softened, about 5 minutes. Add the diced ham and cook, stirring occasionally, until the ham is lightly browned, about 5 minutes.

In a medium bowl, whisk together eggs, 1/2 cup milk, and cheddar cheese. Pour the egg mixture into the prepared baking dish. Sprinkle the top with Parmesan cheese. Pour the ham and vegetable mixture over the eggs. Bake for 25 minutes or until the eggs are just set.

Meanwhile, melt 1/4 cup butter in a small saucepan over medium heat. Whisk in flour and cook, stirring constantly, for 1 minute. Gradually whisk in 1 cup milk and cook, stirring constantly, until the sauce is thick and bubbly, about 5 minutes. Remove from heat and stir in salt and pepper.

When the casserole is done baking, pour the hollandaise sauce over the top. Return to the oven and bake until the sauce is bubbly and lightly browned, about 10 minutes. Let cool for 5 minutes before serving.
