Authentic Chicken Massaman Curry Recipe

Ingredients

  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground white pepper
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground ginger
  • 1/4 cup chopped cilantro, for garnish

Instructions

Making an authentic Chicken Massaman Curry is a fairly straightforward and simple process. To start, heat the oil in a large pot over medium-high heat. Add in the diced onion and minced garlic and sauté until the onion is softened and beginning to brown, about 5 minutes. Add the Massaman curry paste and stir to combine.

Next, add the coconut milk, fish sauce, and brown sugar to the pot and stir to combine. Add the chicken and stir to coat. Reduce the heat to low and allow the mixture to simmer for about 15 minutes, stirring occasionally.

Add in the peanuts, raisins, potatoes, carrots, nutmeg, cinnamon, cardamom, cloves, coriander, white pepper, black pepper, and ginger. Stir to combine and allow the mixture to simmer for about 30 minutes, stirring occasionally, until the chicken is cooked through and the potatoes and carrots are tender.
