- 1/2 cup (115 g) of butter, at room temperature
- 1 cup (200 g) of caster (superfine) sugar
- 2 eggs
- 1/2 teaspoon of vanilla extract
- 2 cups (250 g) of self-raising flour
- 1 teaspoon of baking powder
- 1/3 cup (80 ml) of milk
- 1/2 cup (50 g) of lemon verbena leaves, finely chopped
- 1/4 cup (85 g) of lemon curd
- 2 tablespoons of caster (superfine) sugar
- 3 tablespoons of lemon juice
Instructions
To make the cake, preheat the oven to 350°F (180°C). Grease and line the base and sides of an 8-inch (20 cm) round cake tin with parchment paper. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, sift together the flour and baking powder. Slowly add the dry ingredients to the wet ingredients, alternating with the milk. Once all the ingredients are combined, fold in the lemon verbena. Pour the mixture into the prepared tin and bake in the preheated oven for 35-40 minutes, or until a skewer inserted into the centre comes out clean.
Meanwhile, make the drizzle. In a small bowl, mix together the lemon curd, caster sugar, and lemon juice. Once the cake has finished baking, remove from the oven and allow to cool for 10 minutes before taking it out of the tin. Pierce the top of the cake several times with a skewer and spoon over the drizzle.
