Instructions
For The Chhole
- Soak the chickpeas overnight in water. Drain and set aside.
- Heat the oil in a pan over medium heat. Add the cumin seeds and sauté for a few seconds.
- Add the chopped onions and sauté until they turn golden brown. Add the chopped tomatoes and sauté for a few minutes.
- Add the garlic and ginger pastes and sauté for a few more minutes.
- Add the coriander powder, garam masala, red chili powder, and turmeric powder. Mix well and sauté for a few more minutes.
- Add the drained chickpeas and mix well. Add enough water to cover the chickpeas and bring to a boil.
- Reduce the heat to low and simmer for 30 minutes or until the chickpeas are cooked. Add more water if needed.
- Remove from heat and let cool. Mash the chickpeas slightly and set aside.
For The Bhature
- In a bowl, mix together the flour, sugar, baking powder, and baking soda. Add the warm water and mix until a soft dough is formed.
- Knead the dough for 5 minutes and cover it with a damp cloth. Let it rest for 30 minutes.
- Divide the dough into 12 equal portions. Roll each portion into a circle of about 5 inches in diameter.
- Heat the oil in a deep-fryer or a pan over medium heat. Gently slide the rolled dough into the oil and fry until golden brown. Remove from heat and drain on paper towels.
Serving
To serve, place the fried bhature on a plate and top it with the mashed chickpeas. Serve with pickles, chutney, and curd.
