Authentic Sarson Ka Saag Recipe
Ingredients
- 1 kg of fresh mustard greens (sarson)
- 1/4 cup of makki ki atta (corn flour)
- 1/4 cup of desi ghee
- 2 onions, chopped
- 2 green chillies, chopped
- 1 teaspoon of cumin seeds
- 1 teaspoon of ginger-garlic paste
- 1 teaspoon of turmeric powder
- 1 teaspoon of red chilli powder
- 1 teaspoon of garam masala
- Salt, to taste
Instructions
1. Start by washing the mustard greens thoroughly and chopping them into small pieces.
2. Heat the ghee in a pressure cooker and add the cumin seeds. Once the cumin seeds start to splutter, add the chopped onions and fry until they are golden brown.
3. Add the ginger-garlic paste and fry for a few minutes. Then add the chopped tomatoes, green chillies, turmeric powder, red chilli powder, and garam masala. Fry for a few minutes until the tomatoes are cooked.
4. Add the chopped mustard greens and mix well. Add 1/2 cup of water and pressure cook for 2-3 whistles.
5. Once the pressure has been released, open the pressure cooker and add the makki ki atta. Mix well and simmer for 5-7 minutes, stirring occasionally.
6. Finally, season with salt and serve hot with roti, naan, or paratha.
