Ingredients
This delicious dish is made up of two components: kofta and saag aloo. For the kofta, you will need 500g of lean minced beef, 1 small onion (finely chopped), 2 cloves of garlic (minced), 2 teaspoons of garam masala, 2 teaspoons of ground cumin, 1 teaspoon of ground coriander, a pinch of chilli powder, 1 teaspoon of turmeric, 2 tablespoons of freshly chopped coriander and 2 tablespoons of plain yogurt. For the saag aloo, you will need 2 large potatoes (peeled and cut into cubes), 2 tablespoons of vegetable oil, 1 large onion (finely chopped), 1 teaspoon of cumin seeds, 2 cloves of garlic (minced), 1 teaspoon of ground coriander, 1 teaspoon of garam masala, 1 teaspoon of ground turmeric, 2 bunches of fresh spinach (washed and chopped), 2 tablespoons of freshly chopped coriander and 2 tablespoons of plain yogurt.
Instructions
To make the kofta, combine the minced beef, chopped onion, garlic, garam masala, cumin, coriander, chilli powder, turmeric, coriander and yogurt in a bowl and mix together until combined. Form the mixture into small balls, about the size of a golf ball. Heat a large frying pan over a medium-high heat and add the kofta balls. Fry for 10 minutes, turning regularly, until golden brown and cooked through. Remove from the pan and set aside.
To make the saag aloo, heat the oil in a large frying pan over a medium-high heat. Add the onion, cumin seeds and garlic and fry for 5 minutes, until softened. Add the ground coriander, garam masala, turmeric and potatoes to the pan and fry for 10 minutes, stirring regularly to prevent sticking. Add the spinach to the pan and cook for a further 5 minutes, until the potatoes are cooked through. Add the coriander and yogurt to the pan and stir to combine. Simmer for a further 5 minutes, until heated through.
To serve, spoon the saag aloo onto a plate and top with the kofta balls. Garnish with a sprinkle of freshly chopped coriander, if desired. Enjoy!
