Instructions
Set the Instant Pot to the sauté setting. Add the butter or oil, cumin seeds, garlic, ginger, garam masala, coriander, turmeric, cayenne, and cardamom. Cook, stirring, until fragrant, about 1 minute. Add the tomatoes, cream, salt, and sugar. Stir to combine. Secure the lid and set the pressure release valve to the sealed position. Cook on high pressure for 5 minutes.
When the cooking cycle is complete, carefully quick-release the pressure. Remove the lid and stir in the paneer cubes. Simmer on the sauté setting until the sauce thickens and the paneer is heated through, about 5 minutes.
