Ingredients
- 6 large free-range eggs
- 2 garlic cloves, peeled and finely chopped
- 2 tablespoons extra virgin olive oil
- 1 small onion, peeled and finely chopped
- 2-3 large potatoes, peeled and cut into cubes
- Salt and pepper, to taste
- 1 teaspoon smoked paprika
Instructions
Begin by heating the olive oil in a large non-stick frying pan over a medium-high heat. Add in the onion, garlic, and potatoes and fry for 8-10 minutes or until the potatoes are golden and cooked through. Season with salt and pepper to taste.
In a separate bowl, crack the eggs and whisk until combined. Add the eggs to the pan and stir to combine with the potatoes. Cook for a few minutes until the eggs start to set. Sprinkle the paprika over the omelette and season with a little more salt and pepper.
Using a spatula, carefully fold the omelette inwards on each side, creating a half-moon shape. Cook for a few minutes until the eggs are fully cooked and the omelette is golden and crisp. Serve the omelette warm, with a sprinkle of parsley, if desired.
