Easy Simnel Cake Recipe Mary Berry

Ingredients
To make this delicious Simnel Cake you will need:
- 225g (8oz) butter, softened
- 225g (8oz) caster sugar
- 4 large eggs
- 225g (8oz) self-raising flour
- 1 teaspoon baking powder
- 2 tablespoons milk
- Zest of 1 lemon
- 225g (8oz) mixed dried fruit
- 50g (2oz) blanched almonds, chopped
- 2 tablespoons apricot jam
- 2 tablespoons brandy (optional)
Instructions
The first step is to preheat your oven to 180°C (160°C fan), gas mark 4. Grease and line a 20cm (8 inch) round cake tin.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, adding a tablespoon of flour with each egg to prevent the mixture from curdling.
Sift together the remaining flour and baking powder and fold into the cake mixture with the milk and lemon zest. Finally, stir in the mixed dried fruit and chopped almonds.
Spoon the mixture into the prepared tin and level the surface. Bake in the preheated oven for 1-1¼ hours or until a skewer inserted into the centre of the cake comes out clean.
Leave the cake to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
Decoration
To decorate the cake, heat the apricot jam and brush it over the top and sides of the cake. Arrange the blanched almonds around the edge of the cake and sprinkle the top with caster sugar.
If desired, warm the brandy and brush it over the cake.
