Ingredients

This Aubergine and Lentil Curry is the perfect vegan meal for dinner. It is full of flavour and easy to make. You will need the following ingredients:

  • 1 large aubergine
  • 1 onion
  • 2 cloves of garlic
  • 1 red chilli
  • 2 tablespoons of ground cumin
  • 1 teaspoon of ground turmeric
  • 2 tablespoons of tomato purée
  • 1 tin of chopped tomatoes
  • 1 tin of green lentils
  • 1 liter of vegetable stock
  • 2 tablespoons of olive oil
  • 1 handful of fresh coriander
  • Salt and pepper to taste

Instructions

Start by prepping the vegetables. Dice the aubergine, onion, garlic and chilli. Heat the oil in a large saucepan over a medium-high heat. Add the aubergine and fry for 4 minutes until golden. Add the onion, garlic and chilli and fry for another 4 minutes until softened.

Add the cumin, turmeric and tomato purée and fry for a further minute. Pour in the tinned tomatoes, lentils and vegetable stock. Bring to the boil and then reduce to a simmer. Cover the saucepan with a lid and allow to cook for 30 minutes. Stir occasionally and add more stock or water if needed.

Once cooked, season to taste with salt and pepper. Serve with fresh coriander and a dollop of natural yogurt. Enjoy!
