Ingredients

This delicious Chinese style sweet and sour fish dish requires several ingredients. You will need: 2 skinless, boneless white fish fillets; 1/2 cup of cornstarch; 2 tablespoons of olive oil; 1/2 cup of white vinegar; 1/3 cup of white sugar; 1/4 cup of ketchup; 1/4 cup of soy sauce; 1/4 cup of chicken broth; 2 cloves of garlic, chopped; 1/2 teaspoon of ground ginger; 1/2 red bell pepper, diced; 1/2 green bell pepper, diced; 1/2 cup of pineapple chunks.

Instructions

Begin by cutting the fish fillets into cubes, then coat them lightly with the cornstarch. In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the fish cubes and cook for about 3 minutes, stirring frequently, until the fish is golden brown. Remove the fish from the pan and set aside.

In a medium saucepan, combine the vinegar, sugar, ketchup, soy sauce, chicken broth, garlic, and ground ginger. Bring the mixture to a boil, stirring occasionally. Reduce the heat to low and simmer for 10 minutes. Add the red and green bell peppers and the pineapple chunks to the pan and simmer for an additional 5 minutes.

Return the cooked fish to the pan with the sauce and stir to combine. Simmer for an additional 5 minutes, stirring occasionally. Serve the sweet and sour fish over steamed white rice.
