  • 2 tomatoes, chopped
  • 1 cup frozen peas
  • 1/2 cup cashew nuts, lightly roasted
  • 1/2 cup curd
  • 2 tablespoons freshly chopped coriander leaves
  • Salt to taste
  • 4 eggs, hard boiled and cut into halves

Instructions

Start by washing and soaking the basmati rice in water for 30 minutes. Drain the rice and set aside.

In a large pot, heat the ghee and oil. When the oil is hot, add the cumin seeds, coriander powder, garam masala, green cardamoms, bay leaves and red chili powder. Fry the spices until they start to crackle and release their aromas.

Next, add the chopped onions, garlic and green chilies. Fry the mixture until the onions are lightly browned. Add the chopped tomatoes and fry for a few minutes. Add the frozen peas and cashew nuts and fry for another few minutes.

Now, add the drained basmati rice to the pot and mix everything together. Fry the mixture for a few minutes. Add the curd, freshly chopped coriander leaves and salt to taste. Mix everything together and fry for a few minutes.

Finally, add 3 cups of water to the pot. Bring the mixture to a boil and then reduce the heat to low. Simmer the mixture, covered, for 15-20 minutes or until the rice is cooked. Add the hard boiled eggs to the pot and mix everything together.

Your egg biryani is now ready to be served. Serve hot with raita or your favorite chutney.
