- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground allspice
- 2 tablespoons tomato paste
- 1/2 cup dry red wine
- 2 bay leaves
- 1/2 cup frozen peas
- 1/2 cup frozen pearl onions
- 1/4 cup freshly chopped parsley
- 1/2 cup diced cooked kidney

For the pastry:

- 2 sheets frozen puff pastry, thawed
- 1 egg, beaten

Instructions



To make the filling:

1. Heat the oil in a large Dutch oven over medium-high heat. Add the beef and cook until browned on all sides, about 5 minutes.
2. Add the broth, onion, carrots, celery, flour, thyme, rosemary, nutmeg, pepper, and allspice. Stir to combine and bring to a simmer. Reduce the heat to low and simmer for 1 hour, stirring occasionally.
3. Add the tomato paste, wine, bay leaves, peas, pearl onions, parsley, and kidney. Simmer for an additional 30 minutes.
4. Preheat the oven to 375 degrees F.
5. Transfer the filling to a 9-inch deep-dish pie plate.

To make the pastry:

1. Lay one sheet of puff pastry over the top of the pie plate. Trim the edges and crimp with a fork. Brush the pastry with the beaten egg.
2. Place the second sheet of puff pastry on top and trim the edges. Crimp the edges and brush with the beaten egg.
3. Cut a few small vents in the top of the pastry.
4. Bake for 30 minutes, or until the pastry is golden brown.

Serving
